Value-added and Processed meats

Application of alternative curing ingredients and clean label ingredients to value-added and processed meat products

Evaluation and modulation of microbial spoilage in meat products

Use of high-pressure processing to improve the safety and quality for meat products

Impact of food safety interventions on meat product quality
