The basic concept and research progress of new interdisciplinary food physical processing are introduced. The value of food physical processing for advancing science research and technology development of food processing is analyzed. The related research of Jiangsu University is reviewed briefly. Application of ultrasound in preparation of active peptide is introduced emphatically, which include ultrasonic pretreatment of protein and protease and ultrasonic enhancement of reaction process, and the mechanism of ultrasonic effect. For finishing above research and industrial application, the working mode of ultrasound was created, 15 laboratory multi-mode ultrasonic equipments and 2 industrial multi-mode ultrasonic equipments were developed. Built first functional peptide production line using technology of ultrasonic-assisted enzymatic hydrolysis in 2010, established the first large-scale production of rapeseed peptides company, and pioneered the edible utilization of rapeseed meal. More than 20 kinds of peptide products were developed and marketed by companies.
